Advantages of accelerated ripening:

  • Ripe fruits are more susceptible to damage. Transporting them mature green reduces the risk of mechanical damage during transit.
  • Insure maximum and uniform color development.
  • Allows development of fruits to an acceptable marketable color ahead of disease symptom development. Ex. Latent infection of mango
  • Minimizes shriveling. Allowing fruits to ripen at ambient takes a long time and water loss become great.
  • Faster means of getting cash or faster turnover of capital.
  • To take advantage of high price during early, late or off-season. This is the usually reason for accelerating the ripening of seasonally available fruits and fruit vegetables.
  • Provides wholesaler or retailer flexibility in selling the fruits.
  • More efficient use of ware house space. Limited warehouse space would be best utilized by disposing of commodities as fast as possible.
