Classification of the commodities according to the rate of respiration

  • Commodities with high respiration rates are organs at the immature stage-asparagus, cauliflower, okra, young cob corn etc. Young cob corn has a respiration rate of 570.6 mg CO2 /kg/hour at 260 c.
  • Commodities with low respiration rates are storage organs- potato, onion, sweet potato, yams and ginger. Yam has a respiration rate of 1.52-mg CO2/kg/hour at height of dormancy at dormant condition.
  • Commodities with intermediate rates are exemplified by many fruits at physiological maturity. Lanzones have respiration rate of 70 mg CO2 /kg /hour at ambient condition.
