Introduction

  • All the crops after harvest is also living entity, so should be carefully handled.
  • Once they are detached from the parent plant, they are deprived of the supply of hormones, nutrients, water, etc.
  • Post harvest deterioration refers to the sets of undesirable biochemical, physiological, physical changes that shortens the shelf life ad quality of commodities and make it unsuitable for the consumption.
